A quick and healthy lunch is always appealing. But nothing beats it when it tastes delicious too. I came up with this recipe while cooking it and was so pleased with the result.
I used to make this sandwich before with spinach instead of seaweed and without the sesame seeds and wasabi oil, but with this improvisation I think I am convert.
Makes 1 sandwich
- Slice 4 thin slices of firm lite tofu. Marinate both sides with 1 tsp red chili pasteand 1 tbsp low-sodium soy sauce.
- Pan fry the tofu slices on a nonstick pan using cooking spray until golden brown on both sides. Add a sprinkle of black sesame seeds and thinly sliced gingerwhen you turn over the slices of tofu.
- Toast rye bread (or any bread of your choice) and layer your sandwich with nori or toasted seaweed, the tofu and a drizzle of wasabi oil.
