Tofu & Seaweed Sandwich


A quick and healthy lunch is always appealing. But nothing beats it when it tastes delicious too. I came up with this recipe while cooking it and was so pleased with the result. 
I used to make this sandwich before with spinach instead of seaweed and without the sesame seeds and wasabi oil, but with this improvisation I think I am convert.
Makes 1 sandwich
10 minutes
  1. 1.Slice 4 thin slices of firm lite tofu. Marinate both sides with 1 tsp red chili pasteand 1 tbsp low-sodium soy sauce. 
  2. 2.Pan fry the tofu slices on a nonstick pan using cooking spray until golden brown on both sides. Add a sprinkle of black sesame seeds and thinly sliced gingerwhen you turn over the slices of tofu.
  3. 3.Toast rye bread (or any bread of your choice) and layer your sandwich with nori or toasted seaweed, the tofu and a drizzle of wasabi oil.
