As some of you know I had a gorgeous baby boy one month ago! The little munchkin doesn’t let me spend much time in the kitchen... but cooking has been such a release for me for so long that I am now trying to make more time for it. And the only way to do that is to go minimal:
- 1.minimal shop
- 2.minimal clean
- 3.minimal chop
- 4.minimal time
This was quick & easy, added bonus being healthy!Serves 3
- 1.Wash and pat dry 3 6oz fillets of lemon sole
- 2.Season with salt & pepper
- 3.Whisk one large egg lightly in a soup plate and prep another soup plate with a light dusting of flour
- 4.Heat 3 tbsp olive oil in a large skillet5.Using a pair of tongs dip the seasoned fillets in the egg to coat on both sides, followed by the flour and pan fry the fish on both sides until golden brown and crisp,
Serve with roasted or steamed asparagus and potatoes.
