This recipe is also from Emeril Lagase’s new show on the Cooking Channel, calledFresh Food Fast. Just as the Sauteed Chicken Breasts with Dijon Herb sauce lived up to the shows name, this Garlicky Bok Choy did too. Quick and easy, it is recommended to be served with the chicken, but go ahead and serve it with Chicken & Broccoli over brown rice and enjoy your meals!
I also think that this is one of those recipes that you should always have handy as it is a great way to saute mostly any vegetable!
Serves 4
- 1.Place a 14-inch saute pan over medium-high heat and add 2 tbsp canola oil. When it is hot, add 1 tsp crushed red pepper and cook until fragrant, about 30 seconds.
- 2.Add 1 pound bok choy, split in half lengthwise, cut sides down and cook for 1 to 2 minutes.
- 3.Add 2 tbsp roughly chopped garlic, 1/2 tsp salt, 1/4 cup white wine, 1/4 cup vegetable stock and 1/2 tsp sesame oil. Cook for 3 minutes, until the stock is mostly reduced.
- 4.Add 1/2 cup slivered almonds, if desired. Turn the bok choy so that it is evenly coated. Remove from the heat and serve immediately.
