Roasted garlic goat cheese spread


This spread was made for when I entertained Denise and Sybil on the 23rd of May last week. I re-made it for our cousins visiting today and it was a hit once again. It’s a great appetizer to make with 10 minutes active time and 1 hour cooking time in total.
Makes 2 cups
  1. 1.Preheat the oven to 350F (175C)
  2. 2.In a medium baking tray, place 5 bulbs of garlic (yes, the WHOLE BULBS) with the tops trimmed with 1/2 cup vegetable broth, 1 tbsp chopped rosemary and 2 tbsp unsalted butter. Roast for 45 minutes, uncovered.
  3. 3.Let the garlic cool, then squeeze the garlic pulp out from the skins into a large mixing bowl. Smash with a fork, mixed in with the liquid from the baking tray and10.5 ounces of Montrachet goat cheese (or any soft goat cheese)
