Quick App 4: Roasted Olive and Garlic and Goat Cheese Spread






























This was one of the appetizers at our friends, Nasha and Kunals New Years Eve party. I kept some for myself and didn’t share it all. This recipe was inspired from a Bon Appetit recipe, which I tweaked slightly to reduce the amount of prep work right before the party– the idea being– make it quick, make it easy and make it a spread that we could just lay out and let be.

Plus it makes a large batch, so it’s great for large crowds too. This recipe can mostly easily be halved or doubled as per your requirements and is very flexible!

Makes 3 cups

2 large bulbs of garlic, top 3/4” cut, revealing cloves
1 1/2 cups of pitted mixed olives, chopped
2 tbsp coriander seeds, coarsely crushed
2 tsp red pepper flakes
6 tbsp olive oil
1 fresh sprig rosemary

1 8-ounce log soft fresh goat cheese

  1. 1.Pre-heat oven to 400F (200C)
  2. 2.In a shallow baking pan place the garlic bulbs and remaining five ingredients. Cover with foil and bake for 60–70 minutes
  3. 3.Remove foil and let it cool. Squeeze garlic pulp out and mixed with the olive mixture.
  4. 4.Blend with goat cheese.
  5. 5.Serve with toasts.
