- In a medium bowl, mix together 2 cups shredded Pepper Jack cheese, 3 tbsp hoisin sauce, 1 tbsp Sriracha sauce, 4 tbsp minced fresh cilantro, 1/2 tsp sesame oil along with 2 scallions, sliced very thinly.
- To make the sandwich, warm a cast iron skillet over medium heat. Lay 2 slices ofcooked ham on rye bread, spoon 1/4 of the cheese filling and grilled the sandwich with the bread buttered on the outside.
- Press down to compress the sandwich and let some of the cheese ooze out.
Enjoy and serve with Sweet Corn Chicken Soup.
